Comfort Foods Done Better?: Ham & Potato Casserole

Some people might call this "Party Potatoes" or even "Scalloped Ham & Potatoes", but no matter what you call it, it's warm, cheesy, delicious, all natural/organic, gluten free, and delicious!
Please feel free to use or adjust this recipe however you need too.  I know that many Mom's work, and don't always have time to make things from scratch, but if you can find the time, it is well worth it!

Ingredient List
*All of the items below are certified gluten free and organic*
  • 2 lbs potatoes (Thinly sliced or shredded, my new food processor was awesome for this!)
  • 1 tsp kosher sea salt
  • 1 small yellow onion diced
  • 1 tsp ground pepper
  • 1 box of condensed cream of chicken soup (Pacific Natural Foods)
  • 1 pint sour cream (Kalona SuperNatural)
  • 2 cups shredded cheddar (Organic Valley)
  • Diced ham (Use as much as you want.  We had ham the night before, so we added quite a bit.)
  • 4 tbs butter (Organic Valley) melted
  • 2 cups crushed cornflakes (Southern Homestyle Corn Flake Crumbs)

Directions
  1. Preheat oven to 350 degrees. 
  2. In a large bowl combine all of the above ingredients, except for the butter and crushed cornflakes. 
  3. Spray a 9x13 with organic cooking spray.   
  4. Add ingredients and smooth over the top with a spatula. 
  5. In a microwavable bowl, melt butter.  Add crushed cornflakes to the butter and mix until  moistened. 
  6. Spread cornflake mixture on top of casserole.
  7. Bake uncovered for about 1 hour.  If you use the brand of cornflake crumbs above, note that they will not brown like traditional cornflakes.
  8. Take out of the oven and enjoy!
