Roast, Potatoes, & Carrots
*1 1lb package of baby carrots
*1 medium yellow onion, sliced
*1 green pepper, sliced
*1 chuck roast
*2 bay leaves
*1/2 tsp course ground pepper, divided
*1/2 tsp kosher sea salt, divided
*1/2 tsp garlic salt, divided
*1/2 tsp onion powder, divided
*1 large crockpot
Directions
- Add around 2 cups water to the crockpot first.
- Add bay leaves
- Scrub potatoes well and add to the crockpot.
- Next add 1 lbs of baby carrots on top of potatoes.
- Season potatoes and carrots with 1/4 tsp of the above spices.
- Season both sides of the roast with the remaining spices and add to the crockpot.
- Add thinly sliced onions and green peppers to the areas on either side of the roast as well as on top.
- Cook on Low for 8 to 10 hours or on High for 4 to 6 hours.
- Remove, slice, and enjoy!
