Comfort Foods Done Better?: Pot Roast, Potatoes, & Carrots

Nothing says "Comfort Food" better than something cooked in the crockpot.  I look forward to this meal every fall because it's so easy, so delicious, and so warm and toasty!  Jason especially likes coming home and smelling it the minute he gets out of the car.

Roast, Potatoes, & Carrots
Ingredient List
*1 package of B sized red potato or 5 to 6 regular red potatoes, scrubbed well with skins
*1 1lb package of baby carrots
*1 medium yellow onion, sliced
*1 green pepper, sliced
*1 chuck roast
*2 bay leaves
*1/2 tsp course ground pepper, divided
*1/2 tsp kosher sea salt, divided
*1/2 tsp garlic salt, divided
*1/2 tsp onion powder, divided
*1 large crockpot


    Directions
    1. Add around 2 cups water to the crockpot first.
    2. Add bay leaves
    3. Scrub potatoes well and add to the crockpot.
    4. Next add 1 lbs of baby carrots on top of potatoes.
    5. Season potatoes and carrots with 1/4 tsp of the above spices.
    6. Season both sides of the roast with the remaining spices and add to the crockpot.
    7. Add thinly sliced onions and green peppers to the areas on either side of the roast as well as on top.
    8. Cook on Low for 8 to 10 hours or on High for 4 to 6 hours.
    9. Remove, slice, and enjoy!
