Comfort Foods Done Better?: Spicy Chicken Wings & Potato Wedges

Spicy Chicken Wings and Potato Wedges
Not only is this a great comfort food, but it is also great for Super Bowl Parties or a Friday night movie night with the kids by the t.v.!  Be sure to wash it all down with an ice cold gluten free beer like Redbridge!




Spicy Chicken Wings
Ingredient List
  • 20 Chicken wings (drums and wings)
  • 2 tbs hot sauce (Check the label for things you can't pronounce and avoid those that contain things that scare you!)
  • 1/4 cup butter (Organic Valley)
  • 1 tbs cider vinegar
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground black pepper
  • 1/4 tsp garlic powder
  • 1/8 tsp celery seed
Directions
  1. Preheat oven to 375 degrees or warm up grill.
  2. If using oven, place chicken on a cookie sheet sprayed with organic cooking oil.
  3. Bake in oven for 30 min or until cooked through and crispy. While chicken is cooking, prepare sauce.
  4. If using grill, place directly on grill and cook until done and crispy.  While chicken is grilling, prepare sauce.
  5. Combine hot sauce, butter, vinegar, paprika, cayenne, black pepper, garlic powder, and celery seed in a small sauce pan.
  6. Set over low heat, mixing until butter is melted and combined; simmer for 5 minutes and remove from heat.
  7. When wings are done, dip in sauce to coat well, then shake off excess and return to cookie sheet or grill.
  8. Reduce grill or oven temperature to 250 degrees and give wings another 15 min.
  9. Toss wings in remaining sauce after you remove from oven and serve.

Chipotle Dipping Sauce
Dipping Sauce Ingredients
  • 1/2 cup homemade mayo
  • 1/2 cup cilantro
  • 1 clove garlic
  • 2 tbs olive oil
  • 2 chipotle peppers in adobo sauce
  • lime juice to taste
Directions
  1. Combine all ingredients in a food processor or Magic Bullet until mixed well.
  2. Refrigerate until ready to serve.
Sweet Potato Wedges
Ingredient List
  • 4 to 6 medium-sized sweet potatoes cut lengthwise into spears
  • 1/4 cup olive oil
  • 2 tsp cumin
  • 1/2 kosher sea salt
  • 1/2 ground black pepper
Directions
  1. Preheat oven to 400 degrees. 
  2. Cover 2 cookie sheets with aluminum foil
  3. Toss sweet potatoes with olive oil, cumin, salt, and pepper.
  4. Spread out evenly on cookie sheets, making sure not to crowd the spears.
  5. Turn potatoes once or twice during baking.  Bake 30-40 minutes or until potatoes are done and slightly crispy.
